Lime juice (freshly squeezed)
Lime juice is the tart, acidic liquid extracted from limes, sharper and slightly more floral than lemon juice, used widely in Latin American, Southeast Asian, and Caribbean cooking. It is used in dressings, marinades, drinks, and dishes like ceviche, where its acidity helps to firm and effectively cook raw seafood. Fresh lime juice generally has a brighter, more vibrant flavour than bottled versions.
Freshly squeezed liquid has no added water or concentration, giving a straightforward liquid density.
