Lime zest (loosely packed)
Lime zest is the thin, fragrant outer peel of the lime, grated away from the bitter white pith beneath. It carries concentrated citrus oils used to add bright lime flavour to baking, dressings, and marinades without the liquid or acidity of the juice. Only the coloured outer layer is used, as the pith is notably bitter.
Loosely packed means the ingredient is added to the cup without pressing it down, leaving air pockets that make it weigh less than the same amount firmly packed.
