Lotus seeds (dried)
Lotus seeds are the small, round seeds found within the lotus flower's seed pod, with a mild, slightly sweet, starchy flavour. They are used in East Asian cooking, boiled and used in soups, congee, and desserts, or candied and used in pastries like mooncakes. Dried lotus seeds require soaking or simmering to soften before use.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
