Lupin beans (dried)
Lupin beans are pale yellow legumes with a firm texture and mildly bitter flavour, requiring extensive soaking and rinsing to remove naturally occurring bitter alkaloids before eating. They are eaten as a pickled snack in Mediterranean countries, similar to how olives are served. Improperly processed lupin beans can retain unpleasant bitterness or toxicity, so thorough preparation is important.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
