Lupin flour
Lupin flour is made from ground, processed lupin beans, with a high protein and fibre content and a mildly nutty, slightly bitter flavour. It is used in baking as a partial wheat flour substitute, particularly in low-carbohydrate and high-protein recipes. It is naturally gluten-free but is generally blended with other flours for structure.
