Makrut lime leaves (dried)

Makrut lime leaves, also known as kaffir lime leaves, are the glossy, double-lobed leaves of the makrut lime tree, with an intensely fragrant, citrusy aroma. They are used whole or finely shredded in Thai and Southeast Asian curries and soups, typically simmered in the dish and sometimes removed before serving. Their fragrance is much stronger than that of regular citrus leaves.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
