Manchego (grated)
Manchego is a firm Spanish sheep's milk cheese with a dense, slightly crumbly texture and a rich, nutty, tangy flavour that intensifies with age. It is served on cheese boards, often with quince paste, or grated over dishes, with younger versions being milder and softer than aged ones. Its distinctive rind pattern comes from the traditional esparto grass moulds it was historically pressed in.
Grating produces fine shreds that pack more densely than larger chopped or sliced pieces of the same ingredient.
