Marsala
Marsala is a fortified Italian wine from Sicily, ranging from dry to sweet, with a rich, nutty, caramelised flavour. It is used in cooking, most famously in chicken or veal marsala and in desserts like tiramisu and zabaglione, where its sweetness and depth complement both savoury and sweet preparations. Dry and sweet versions are used somewhat differently depending on the dish.
