Masa harina

Masa harina is a corn flour made from dried corn kernels that have been treated with an alkaline solution, a process called nixtamalisation, then ground fine. It is used to make tortillas, tamales, and other traditional Mexican and Central American dishes, with the nixtamalisation process giving it a distinct flavour and improved nutritional availability compared to plain cornmeal. It is not interchangeable with regular cornmeal, which has not undergone the same treatment.
