Miso paste
Miso paste is a fermented Japanese seasoning made from soybeans and salt, often combined with rice or barley, producing a thick, deeply savoury paste. It is dissolved into dashi to make miso soup, or used in marinades, dressings, and glazes for a concentrated umami flavour. White miso paste is milder and sweeter than the more pungent, longer-fermented red and dark brown varieties.
