Miso (white)
Miso is a fermented Japanese paste made from soybeans, salt, and a fermenting culture, sometimes combined with rice or barley, resulting in a deeply savoury, salty flavour. It is used as the base for miso soup, as well as in marinades, dressings, and glazes. Its colour, ranging from white to red to dark brown, generally indicates the length of fermentation and the intensity of its flavour.
