Mixed peel (dried)
Mixed peel is a combination of candied citrus peels, typically orange, lemon, and sometimes lime, cooked in sugar syrup until sweet and slightly chewy. It is used in fruit cakes, hot cross buns, and puddings for a chewy, citrusy sweetness distributed throughout the batter. Its firm, sticky texture is distinct from fresh citrus zest.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
