Moth beans (dried)
Moth beans are small, brown legumes commonly used in South Asian cooking, with an earthy flavour similar to mung beans. They are used in curries, sprouted for salads, or ground into flour, and dried beans typically require soaking before cooking. They are less widely available outside South Asian cuisine than more common legumes like chickpeas or lentils.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
