MSG
MSG, or monosodium glutamate, is a flavour enhancer made from glutamic acid, a naturally occurring amino acid, and is used to boost the savoury, umami quality of dishes. It is added in small amounts to soups, stir-fries, and processed foods, and dissolves readily into liquid or is sprinkled directly onto food. It has little flavour on its own but amplifies existing savoury notes in a dish.
