Mulato chilli (dried)
Mulato chilli is a dried chilli pepper, a variant of poblano dried and fermented slightly differently than ancho, with a rich, sweet, smoky, chocolate-like flavour. It is rehydrated and used in Mexican sauces, particularly mole, where it contributes deep, complex flavour alongside other dried chillies. It is milder in heat but more complex in flavour than many other dried chillies.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
