Mung beans are small, green legumes with a mild, slightly sweet flavour, used whole, split, or sprouted across Asian cooking. They are cooked into soups, curries, and sweet porridges, or ground into flour for noodles and pastries. Sprouted mung beans are commonly known simply as bean sprouts.
