Mushroom stock
Mushroom stock is a savoury liquid made by simmering mushrooms, often along with vegetables and aromatics, to extract a deep, earthy, umami-rich flavour. It is used as a vegetarian or vegan alternative to meat-based stocks in soups, risottos, and sauces. Dried mushrooms are sometimes included in the stock for a more concentrated flavour.
