Mustard oil
Mustard oil is a pungent oil pressed from mustard seeds, with a sharp, slightly spicy flavour, widely used in South Asian and Bengali cooking. It is often heated until it just begins to smoke before use, which mellows its raw pungency somewhat. Its distinctive flavour is central to many regional Indian dishes.
