Mustard seeds (yellow)
Mustard seeds are small, round seeds available in yellow, brown, and black varieties, with flavours ranging from mild to quite pungent and spicy. They are used whole in pickling and tempering oil at the start of cooking, particularly in Indian cuisine, where they pop and release their aromatic flavour when heated in oil. Ground mustard seeds are used to make prepared mustard condiments.
