Oat flour

Oat flour is made by grinding rolled or whole oats into a fine powder, with a mild, slightly sweet, nutty flavour. It is naturally gluten-free, though often processed in facilities that also handle wheat, and is used in baking as a partial or full substitute for wheat flour, producing a denser, moister crumb. It lacks the gluten structure of wheat flour, so it is often blended with other flours in yeasted baking.
