Orange zest (loosely packed)

Orange zest is the thin, fragrant outer peel of an orange, grated or peeled away from the bitter white pith beneath. It carries concentrated citrus oils, used to add bright orange flavour to baking, dressings, and savoury dishes without the liquid or acidity of the juice. Only the coloured outer layer is used, since the white pith underneath is notably bitter.

Loosely packed means the ingredient is added to the cup without pressing it down, leaving air pockets that make it weigh less than the same amount firmly packed.
