Oregano (dried)
Oregano is a robust, earthy herb with a slightly peppery, pungent flavour, central to Italian, Greek, and Mexican cooking. It is used fresh or dried in sauces, marinades, and roasted dishes, with the dried form generally considered more flavourful and concentrated than fresh oregano, unlike most other herbs. It pairs particularly well with tomato-based dishes.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
