Oyster sauce
Oyster sauce is a thick, dark, savoury Chinese sauce made from oyster extracts, sugar, and salt, with a rich, slightly sweet, umami flavour. It is used in stir-fries, marinades, and as a table condiment, adding depth and a glossy sheen to dishes. Vegetarian versions made from mushrooms are also available, mimicking the same savoury quality.
