Parmesan (roughly grated)
Parmesan is a hard, aged Italian cheese made from cow's milk, with a granular texture and an intensely savoury, nutty, slightly salty flavour. It is grated over pasta, salads, and soups, or eaten in small chunks on its own, with its flavour becoming sharper and more concentrated the longer it ages. Its rind, though tough, is often simmered in soups and stocks for added flavour.
A rough grate produces coarser shreds that trap more air than a fine grate of the same ingredient.
