Pasilla chilli (dried)
Pasilla chilli is a dried Mexican chilli made from the chilaca pepper, long and dark with a rich, mild, slightly fruity and raisin-like flavour. It is rehydrated and used in mole sauces and other Mexican dishes, often alongside ancho and mulato chillies for layered flavour. Its dark, wrinkled skin distinguishes it from other common dried chillies.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
