Peanuts (roasted)
Peanuts are legumes that grow underground, with a rich, nutty flavour and a firm, slightly crumbly texture once roasted. They are eaten raw, roasted, or boiled as a snack, ground into peanut butter, or used in savoury dishes and sauces, particularly in Southeast Asian and West African cooking. Despite being commonly called a nut, they belong to the legume family rather than tree nuts.
Roasting drives off moisture and can shrink or crisp an ingredient, giving it a different density than the raw form.
