Peas (frozen)
Peas are small, round green legumes eaten fresh or frozen, with a sweet, mild flavour when young and freshly picked. They are steamed, boiled, or added to soups, stews, and rice dishes, and frozen peas are commonly used since fresh peas begin converting their sugars to starch soon after picking. Their sweetness is most pronounced when they are very fresh or freshly frozen.
Freezing can cause an ingredient to clump or trap air unevenly, which slightly changes how it packs into a measuring cup compared with fresh.
