Pectin (powder)
Pectin is a natural gelling agent found in the cell walls of fruits, extracted commercially and used to help jams, jellies, and preserves set into a firm, spreadable consistency. Some fruits, like apples and citrus, naturally contain enough pectin to set without additions, while lower-pectin fruits often need it added. It requires the right balance of sugar and acid in a recipe to gel properly.
As a fine powder, this ingredient packs densely into a cup with very little trapped air.
