Perilla leaves are aromatic, slightly jagged-edged leaves used in Korean and Japanese cooking, with a distinctive flavour combining notes of mint, basil, and anise. They are used raw as a wrap for grilled meats, pickled, or shredded into salads and rice dishes. Korean and Japanese varieties differ somewhat in flavour and are generally used in their respective cuisines.
