Pico de gallo
Pico de gallo is a fresh, uncooked Mexican salsa made from chopped tomatoes, onion, chilli, coriander, and lime juice. It is used as a topping for tacos and grilled meats, or served as a dip with tortilla chips, with a chunky texture distinct from smoother blended salsas. It is typically made fresh and eaten soon after preparation, as the vegetables release liquid over time.
