Pigeon peas (dried)

Pigeon peas are small, round legumes with an earthy, slightly sweet flavour, used widely in Caribbean, African, and South Asian cooking, where they are also known as toor dal when split. They are cooked into stews, rice dishes, and dals, and dried peas typically require soaking before cooking. Fresh pigeon peas have a milder flavour and shorter cooking time than the dried form.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
