Pimento (ground)
Pimento refers to a mild, sweet red pepper, often sold roasted, canned, or jarred, commonly used to stuff olives or add sweetness and colour to dishes. It has a milder flavour than most bell peppers and a soft texture, particularly once roasted or preserved. It is also the name for the dried berry known as allspice in some regions, so context determines which is meant.
Grinding reduces an ingredient to a fine, even texture that generally packs more densely than a whole or crushed form.
