Pineapple (fresh, diced)
Pineapple is a tropical fruit with a tough, spiky exterior and sweet, tangy, juicy yellow flesh. It is eaten fresh, grilled, or added to both sweet and savoury dishes, with an enzyme in the fresh fruit that can break down proteins and prevent gelatin from setting. Cooking or canning deactivates this enzyme, unlike fresh pineapple.
