Polenta (instant)
Polenta is a porridge made from coarsely ground cornmeal, cooked slowly in water or stock until thick and creamy, a staple of Northern Italian cooking. It is served soft and spoonable, or cooled, sliced, and fried or grilled for a firmer, crisp-edged preparation. Its texture depends on the coarseness of the cornmeal grind and how long it is cooked.
