Porcini mushrooms (dried)
Porcini mushrooms are a prized wild mushroom variety with a rich, nutty, earthy flavour and a meaty texture, popular in Italian cooking. They are available fresh in season or, more commonly, dried, with the dried form requiring rehydration in warm water before use, and the soaking liquid often reserved for its concentrated flavour. Dried porcini have a much more intense, concentrated flavour than fresh.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
