Preserved lemon (finely chopped)

Preserved lemon is a whole lemon that has been salted and left to ferment in its own juice, softening the rind and mellowing its bitterness into a salty, tangy, intensely aromatic condiment. It is a key ingredient in North African cooking, particularly Moroccan tagines, where the rind is typically the part used, finely chopped, with the pulp sometimes discarded. Its unique fermented, salty-sour flavour cannot easily be replicated with fresh lemon.

Finely chopped pieces are small and pack more densely into a cup than roughly chopped pieces of the same ingredient.
