Quark

Quark is a soft, fresh dairy product similar to a cross between yoghurt and cream cheese, with a mild, tangy flavour and a smooth, slightly thick texture. It is used in baking, particularly in Central and Eastern European cheesecakes and dumplings, as well as eaten on its own with fruit or as a spread. Its texture is generally smoother and less tangy than Greek yoghurt.
