Quince (diced)

Quince is a hard, fragrant, pear-shaped fruit that is unpalatable raw due to its astringency, but becomes soft, sweet, and rosy pink when cooked slowly. It is stewed, poached, or made into pastes and jellies, with its natural pectin content helping it set well into preserves. Its transformation from hard and tart to soft and sweet with cooking is one of its most distinctive characteristics.

Dicing cuts an ingredient into small, even cubes, which pack differently into a cup than slices or larger chopped pieces.
