Quince paste
Quince paste, also known as membrillo, is a firm, sweet fruit paste made by cooking quince with sugar until thick enough to set into a sliceable block. It is traditionally served alongside cheese, particularly hard sheep's milk cheeses like Manchego, providing a sweet contrast. Its dense, jelly-like texture allows it to be sliced neatly.
