Radicchio (shredded)
Radicchio is a variety of chicory with tightly packed, deep red-purple leaves and a distinctly bitter flavour. It is eaten raw in salads for a bitter, crunchy contrast, or grilled and roasted, which mellows its bitterness and brings out a subtle sweetness. Its firm, compact leaves hold up well to both raw and cooked preparations.
Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
