Red cabbage (shredded)
Red cabbage is a variety of cabbage with deep purple-red leaves and a slightly peppery flavour, similar to green cabbage but often used in slightly different applications. It is eaten raw in slaws, pickled, or braised slowly with vinegar and spices in dishes common to German and other European cooking. Its pigment can shift colour depending on the acidity of the liquid it is cooked in.
Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
