Rice vinegar (liquid)
Rice vinegar is a mild, slightly sweet vinegar made from fermented rice, common in East and Southeast Asian cooking. It is used in sushi rice, dressings, marinades, and dipping sauces, with a gentler acidity than many Western vinegars. Seasoned rice vinegar, which has added sugar and salt, differs from the plain variety and is specifically used for sushi rice.
