Rice wine (liquid)

Rice wine refers to fermented alcoholic beverages made from rice, including Chinese Shaoxing wine and Japanese sake, used both as a drink and as a cooking ingredient. In cooking, it adds a subtle sweetness and depth to marinades, stir-fries, and braises, and helps tenderise meat and reduce unwanted odours in some dishes. Cooking varieties are often lower in quality and sometimes salted, distinguishing them from wine meant for drinking.
