Rosemary (dried)
Rosemary is a fragrant, needle-leaved herb with a strong, piney, slightly resinous flavour, commonly used fresh or dried in Mediterranean cooking. It is used in roasts, marinades, and breads, particularly well paired with lamb, chicken, and potatoes, and holds up well to long cooking times due to its robust flavour and sturdy leaves. Fresh rosemary sprigs are sometimes used whole and removed before serving.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
