Rum
Rum is a spirit distilled from sugarcane juice or molasses, ranging from light and clean to dark and richly flavoured depending on aging and production method. It is used in baking, desserts, and cocktails, adding sweetness and depth once its raw alcohol content cooks off, particularly in fruit cakes and rum-based sauces. Dark and light rum are often used somewhat interchangeably, though dark rum brings a more pronounced molasses flavour.
