Sacha inchi seeds (roasted)

Sacha inchi seeds, also known as Inca peanuts, are the seeds of a plant native to the Amazon, with a mild, nutty flavour similar to roasted peanuts. They are eaten roasted as a snack, pressed for oil, or ground into flour, and are notable for having a naturally different fat composition than most other seeds. Their star-shaped pod is distinctive but not eaten.

Roasting drives off moisture and can shrink or crisp an ingredient, giving it a different density than the raw form.
