Sage (dried, ground)
Sage is an aromatic herb with soft, grey-green leaves and a strong, earthy, slightly peppery flavour, commonly used fresh or dried in savoury cooking. It pairs particularly well with rich or fatty foods, such as butter, pork, and poultry, and is often fried briefly in butter until crisp as a garnish. Its robust flavour means it holds up well to longer cooking times.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
