Salsa verde
Salsa verde refers to two distinct green sauces depending on the cuisine: a Mexican version made from tomatillos, chillies, and coriander, and an Italian version made from parsley, capers, anchovies, and olive oil. Both are used as bright, tangy condiments, the Mexican version with tacos and grilled meats, the Italian version with fish, meats, and vegetables. The two versions differ significantly in ingredients and flavour despite sharing a name.
