Sambal oelek (paste)

Sambal oelek is a simple, fiery Indonesian chilli paste made primarily from ground fresh red chillies, salt, and vinegar, without the additional garlic and sugar found in many other chilli sauces. It is used as a base for cooking or a table condiment, adding pure chilli heat to a dish. Its straightforward, minimal ingredient list distinguishes it from more complex sambals and chilli pastes.

As a paste, this ingredient has no trapped air and packs solidly into a measuring cup, similar to a thick liquid.
