Schmaltz
Schmaltz is rendered chicken or goose fat, traditional in Jewish cooking, with a rich, savoury flavour used for frying, roasting, and flavouring dishes like chopped liver. It is solid or semi-solid at room temperature, similar to other rendered animal fats, and imparts a distinctive poultry flavour wherever it is used. It was historically a common cooking fat before vegetable oils became widespread.
